Chocolate Cadbury Pie

Peeps, jelly beans, chocolate bunnies, move aside! The best Easter candy OF ALL TIME is Cadbury Mini Eggs!

CHOCOLATE CADBURY PIE

Time: 5 hours // Servings: 8

INGREDIENTS

For the crust:

  • 12 tbsp unsalted butter, softened

  • 1/3 cup brown sugar, lightly packed

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1 1/2 cups all purpose flour

For the chocolate filling:

  • 1 cup heavy cream

  • 1 tsp vanilla extract

  • 2 cups (12oz) chocolate chips - whatever kind you have

  • 1 tbsp butter, softened

For topping:

  • 10oz bag of Cadbury Mini Eggs

DIRECTIONS

To make crust:

  • Beat butter and brown sugar until light and fluffy, about 2 minutes. Add vanilla and mix until combined.

  • Add salt and flour and mix until flour disappears and dough forms.

  • Press dough into tart or pie pan, chill in the freezer for about 1 hour.

  • Preheat oven to 350 degrees while crust is chilling.

  • Once crust is chilled, bake for 15-18 minute or until edges turn a light golden brown.

  • Cool completely.

  • Once cool, chill in refrigerator for about 30 minutes.

To make filling:

  • Place chocolate chips and butter in a large heatproof bowl.

  • Heat heavy cream in a saucepan (or microwave) until small bubbles just start to form around the edges of the pan. Do not allow to boil! Once small bubbles form, immediately remove from heat and pour over chocolate, let stand for about 2 minutes.

  • After 2 minutes, begin whisking the chocolate from the center out, until smooth chocolate forms. Pour filling into chilled pie crust and smooth out the top with a spatula.

  • Let chill in the refrigerator until set, about 3-4 hours or overnight. (You can speed it up in the freezer if you’re in a rush!)

To top:

  • Once chocolate filling is set, decorate the top with Cadbury mini eggs!

  • Serve immediately (or later!)

  • Store in the refrigerator.
