Five-Ingredient Funfetti Cake Mix Cookies

It’s Friday (yay!). It’s still winter (ugh!). Sometimes you need an easy-to-whip-up five-ingredient cookie that makes you smile for the inside out.

FIVE INGREDIENT FUNFETTI CAKE MIX COOKIES

Time: 2 hours // Servings: 18-20

INGREDIENTS

  • 1 box funfetti cake mix (any boxed cake mix will work, so use your favorite!)

  • 1 stick (8 tablespoons) unsalted butter, at room temperature

  • 2 large eggs, at room temperature

  • 1 tsp vanilla extract

  • 1/3 cup sprinkles for topping (optional)

DIRECTIONS

  • In a medium mixing bowl, use a spatula to cream the butter until smooth.

  • Add vanilla extract and eggs, one at a time, and whisk until combined.

  • Slowly add in the boxed cake mix and use a spatula to stir just until the powdery texture disappears.

  • Chill in the freezer for at least 1 hours or in the refrigerator overnight.

  • Once the dough is chilled, preheat the oven to 350 degrees and line a rimmed baking sheet with parchment paper or a silicone baking mat.

  • Portion cookies out with a cookie scoop and roll the top of each cookie in sprinkles. Place on the baking sheet, leaving about 3 inches between scoops. Bake 10-12 minutes or until the tops are set and the cookies are starting to develop a little color. Remove from the oven and allow to cool. Store in an airtight container for up to 1 week.
