My Mango Salsa
This salsa is the ultimate “use whatever you have on hand” recipe. There are no true measurements, which makes it a breeze! Have an extra pepper laying around? Use it! Have other veggies you want to use? Sure, throw them in! I often bring this to parties, barbecues & family gatherings, and without fail, someone asks me for the recipe. I finally dug it out of my text messages and put it right here - for you!
MY MANGO SALSA
Time: 30 minutes // Servings: depends on how big your veggies are!
INGREDIENTS
- 2-3 mangos (depending on size), chopped 
- 1 small-ish red onion, diced 
- 1 red pepper, diced 
- 1 orange pepper, diced 
- 1 corn stalk, cut off the cob 
- 1 english cucumber, diced 
- 1/2 jalapeno, diced (optional) 
- 1/2 bunch cilantro, chopped 
- 2 cloves garlic, minced 
- Lime juice of 1 (good sized) lime 
- 1/4 cup olive oil 
- 1 teaspoon cumin 
- 1 teaspoon salt 
- 1 teaspoon black pepper 
DIRECTIONS
- Toss the chopped mango & veggies in a bowl. Stir. 
- Add lime juice, olive oil, & spices. Stir until evenly coated. 
- Serve immediately with your favorite tortilla chips or refrigerate until ready to serve. 
This recipe is great - almost better - made ahead! Store it in an airtight container for up to 1 week in the fridge. Use leftovers to top your pork, fish, or salad!
Also try adding in: pineapple, watermelon, avocado, tomato!
